How much fun was it to add a little bit of sourdough to our St. Patrick's Day??
We love how easy it ended up being to make an Irish Soda bread! A great, quick, and delicious use for some excess starter. Irish Soda breads definitely need to be made all year long, not just in March! These are simple breads, but you can enjoy them plain, with dried fruits, or with seeds as well, and they are delicious no matter what you pick!
And what could be better than that? Easy use of sourdough discard? Versatile and delicious? Perfect!

The Irish soda bread was so yummy and easy, I loved it! Also, I see sourdough hot cross buns in my future ;)

Hi Caroline! Ande is a non-blogging participant, so I'm not sure which recipe she used. I am sure you can adapt any irish soda bread recipe by just making smaller bun sized loaves instead of one big one!
